  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bay leaf
  • cups water
  • 2 cups dried split peas
  • ½ cup barley
  • teaspoons salt
  • 3 potatoes, diced
  • 3 carrots, chopped
  • 3 stalks celery, chopped
  • ½ cup chopped parsley
  • ½ teaspoon dried basil
  • ½ teaspoon dried thyme
  • ½ teaspoon ground black pepper

Instructions
 

  • Collect all the ingredients.
  • Heat oil in a large pot over medium-high heat. Add the onion, garlic, and bay leaf, sautéing until the onions become translucent, about 5 minutes. Then, add the water, split peas, barley, and salt, and bring to a boil. Once boiling, reduce the heat to low and simmer for 2 hours, stirring occasionally.This step allows the flavors to meld as the peas and barley cook slowly, becoming tender and absorbing the savory seasoning while the soup thickens.
  • Add the potatoes, carrots, celery, parsley, basil, thyme, and pepper to the pot. Continue simmering for about 1 hour, until the peas and vegetables are tender. This step ensures the vegetables soften and absorb the flavors of the broth, while the herbs infuse the soup with a fragrant, savory depth.
