Ingredients

  • ¼ cup low-sodium soy sauce
  • 3 tablespoons brown sugar
  • 1 small clove garlic, chopped
  • 1 tablespoon chopped fresh ginger
  • 1 (6 ounce) salmon filet
  • ¼ cup grated carrots
  • 2 radishes, thinly sliced
  • 1 cup shredded red cabbage
  • 1 cup cooked rice
  • 1 teaspoon sesame seeds (optional)
  • 1 green onion, thinly sliced (optional)

Instructions

  • Preheat the oven to 400°F (200°C) and lightly coat a baking dish with cooking spray to prevent sticking and ensure even cooking. This step helps create a non-stick surface for your dish, making cleanup easier and ensuring a crisp texture on the food.
  • In a small bowl, mix together soy sauce, brown sugar, garlic, and ginger to create the teriyaki sauce. Place the salmon fillet, skin side down, in the prepared baking dish, then pour the sauce evenly over the top. This step allows the salmon to absorb the flavors of the sauce as it bakes, creating a sweet and savory glaze that enhances the fish's natural richness.
  • Bake the salmon in the preheated oven for 12 to 15 minutes, or until the fish easily flakes apart when tested with a fork. This ensures the salmon is perfectly cooked—tender, moist, and flaky—without overcooking, allowing the teriyaki glaze to caramelize slightly for added flavor.
  • Spoon the cooked rice into a bowl, then place the baked salmon on top. Drizzle with the teriyaki sauce from the baking dish for extra flavor. Add the shredded cabbage, grated carrots, and sliced radishes for a crunchy, refreshing contrast. Finish by garnishing with sliced green onions and a sprinkle of sesame seeds, adding both flavor and texture to complete the dish.
