- 1 (14.5 ounce) can diced tomatoes
- 1 small onion, chopped
- 1 large clove garlic, coarsely chopped
- 2 tablespoons olive oil
- 1 (7 ounce) package fideo pasta, uncooked
- 3 (14.5 ounce) cans chicken broth
- coarse salt and freshly ground black pepper to taste
- 1 tablespoon chopped fresh cilantro
Add the tomatoes, onion, and garlic to a blender. Pulse a few times to get things moving, then blend for 30 seconds to 1 minute until smooth.
Warm olive oil in a skillet over medium-low heat. Add the fideo pasta and cook, stirring frequently, until it turns golden brown, about 2 to 5 minutes. Remove from heat.
Transfer the tomato mixture to a large saucepan and add the chicken broth and noodles. Bring to a boil, then lower the heat to medium-low and simmer for 7 to 8 minutes, or until the noodles are tender.
