  • 4 (1½-inch thick)  center-cut boneless pork chops
  • teaspoons kosher salt
  • teaspoons freshly ground black pepper
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon poultry seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 cup chicken broth
  • 2 cloves garlic, minced

Instructions
 

  • Make small diamond-shaped cuts in each pork chop using the knife tip, then season them with salt and pepper. This technique helps the seasonings penetrate better, enhancing flavor and allowing the meat to cook more evenly.
  • In a medium bowl, combine paprika, garlic powder, poultry seasoning, oregano, and basil. Set aside 2 teaspoons of the mixture, then coat the pork chops with the remaining seasoning, ensuring it gets into the slits for maximum flavor infusion.
  • Stir the chicken broth and minced garlic into the leftover spice mixture until well combined. This creates a flavorful liquid to enhance the pork chops as they cook.
  • Pour the broth and garlic mixture into a 6-quart slow cooker, then place the seasoned pork chops on top. This allows the chops to cook in the flavorful liquid, ensuring they stay moist and absorb the rich seasonings.
  • Cover the slow cooker and cook on High, occasionally spooning the sauce over the pork chops, until they are just slightly pink in the center, which should take about 1 hour and 40 minutes. To ensure they are fully cooked, check with an instant-read thermometer—the internal temperature should reach at least 145°F (63°C).
