Ingredients
  

  • 1 pound skinless, boneless chicken breast halves - cut into 2 inch pieces
  • 4 cloves garlic, chopped
  • 1 large onion, chopped
  • 1 (28 ounce) can diced tomatoes
  • 3 fresh peaches - peeled, pitted, and sliced
  • 1 (15 ounce) can garbanzo beans, drained
  • 1 cup chopped dried apricots
  • 2 teaspoons ground cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • ½ teaspoon ground coriander
  • ½ teaspoon cayenne pepper
  • 2 cups chicken broth
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 3 tablespoons chopped fresh cilantro
  • cup slivered almonds, toasted

Instructions
 

  • Layer the chicken at the bottom of the slow cooker. Add the garlic, onion, diced tomatoes, sliced peaches, garbanzo beans, dried apricots, and spices—cumin, ginger, cinnamon, coriander, and cayenne pepper. Pour in the chicken broth, ensuring everything is covered. Set the slow cooker to Low and let it cook for 5 hours, allowing the flavors to meld and the chicken to become tender.
  • Take the chicken out of the slow cooker and set it aside to stay warm. In a small bowl, combine the cornstarch and water, then stir the mixture into the sauce in the slow cooker. Increase the heat to High and cook for about 15 minutes, or until the sauce thickens. Once thickened, return the chicken to the slow cooker to heat through. Before serving, garnish with fresh cilantro and toasted almonds for added flavor and texture.
