  • 1 onion, thinly sliced
  • ¼ cup distilled white vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • 6 (6 ounce) lamb chops

  • Combine the onion, vinegar, olive oil, garlic, salt, and pepper in a large resealable bag. Add the lamb chops, seal the bag, and shake to coat evenly. Let the lamb marinate in the refrigerator for about 2 hours to allow the flavors to infuse into the meat. This marination process enhances the lamb's tenderness and adds a depth of flavor, making it more flavorful when grilled.
  • Preheat the outdoor grill to medium-high heat.
  • Take the lamb chops out of the marinade, letting any onions that cling to the meat stay in place. Discard the remaining marinade. To prevent the bones from burning, wrap the exposed ends with aluminum foil. This helps ensure the lamb cooks evenly while keeping the bones from charring on the grill.
  • Grill the lamb chops on the preheated grill for about 3 minutes per side for medium doneness. For accuracy, use an instant-read thermometer, ensuring the internal temperature reaches at least 130°F (54°C). This ensures the lamb is cooked to the perfect level of doneness while remaining juicy and tender.
