- 2 (1 1/2-pound) salmon fillets, skin removed
- 1 cup miso paste
- ½ cup brown sugar
- ½ cup prepared soy-ginger salad dressing
- ¼ cup sake
- ¼ cup water
- 3 tablespoons seasoned rice vinegar
- 2 tablespoons sesame seeds
- 1 teaspoon sesame oil
Set your oven to 400°F (200°C) and allow it to preheat.
Add about 1 inch of water to a large skillet and bring it to a boil. Gently poach the fish for about 2 minutes per side, just until the exterior is cooked. Then, move the fillets to a broiler pan for the next step.
In a small bowl, whisk together miso paste, brown sugar, salad dressing, sake, water, rice vinegar, sesame seeds, and sesame oil until smooth. Generously coat the tops of the salmon fillets with the mixture.
Place the salmon in the preheated oven and bake for about 15 minutes, or until nearly cooked through. Then, switch the oven to broil and cook for an additional 5 minutes, or until the top is golden and bubbling. Finally, slice the fillets into portions for serving.
