Ingredients
  

  • 6 ounces chorizo sausage
  • cooking spray
  • 6 large eggs
  • ¼ cup milk
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 8 (6 inch) corn tortillas
  • 1 cup shredded Monterey Jack cheese
  • ½ cup salsa
  • 1 dash hot pepper sauce (e.g. Tabasco™), or to taste

Instructions
 

  • Place a large skillet on medium-high heat. Cook the chorizo, breaking it apart as it browns, for about 5 to 7 minutes. Once fully cooked, transfer the sausage to a plate and discard any excess grease, wiping the skillet with a paper towel to prepare for the next steps.
  • Spray the same skillet with cooking spray and heat it over medium. In a medium bowl, whisk the eggs, milk, salt, and pepper together, then pour the mixture into the skillet. Stir gently as the eggs cook, allowing them to firm up and nearly dry out. Once the eggs are almost set, stir in the cooked sausage and continue cooking until fully firm.
  • Heat a separate skillet over high heat. Cook the tortillas for about 45 seconds on each side, allowing them to become hot with crispy edges while maintaining their softness in the center.
  • Evenly distribute the Monterey Jack cheese over the warm tortillas. Then, layer each one with the scrambled eggs, a spoonful of salsa, and a dash of hot pepper sauce for an added kick.
