- 2 (8 ounce) fillets cod, cut in half
- 1 tablespoon Cajun seasoning
- ½ teaspoon lemon pepper
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 tablespoons butter
- 1 lemon, juiced
- 2 tablespoons chopped green onion (white part only)
Collect all the necessary ingredients to prepare the dish, ensuring everything is on hand before starting.
Arrange approximately 15 charcoal briquettes in a pyramid shape in the grill. Optionally, add a small amount of lighter fluid to the coals and let it sit for 1 minute before igniting with a match. Let the flames spread across all the coals for about 10 minutes, then spread them evenly in the grill. Allow the coals to burn until a light layer of white ash forms. Finally, brush a thin layer of oil onto the grill grates.
Coat both sides of the cod fillets with Cajun seasoning, lemon pepper, salt, and black pepper. Place the seasoned fillets on a plate and set them aside.
In a small saucepan, melt the butter over medium heat. Stir in the lemon juice and green onion, cooking for about 3 minutes until the onion softens.
Place the fillets on the preheated grill and cook for about 3 minutes per side, until golden and flaky. While grilling, regularly baste the fish with the butter mixture to keep it moist and flavorful.
Let the fillets sit for about 5 minutes after removing them from the heat, allowing the flavors to settle before serving.
Plate the dish and savor the delicious flavors! Enjoy every bite of your perfectly grilled cod.
