  • ½ cup olive oil
  • 2 lemons, juiced
  • 3 cloves garlic, chopped
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh oregano
  • 1 (4 pound) chicken, cut into pieces

Instructions
 

  • Combine olive oil, lemon juice, garlic, rosemary, thyme, and oregano in a glass dish. Add the chicken pieces to the mixture, ensuring they are well-coated, then cover and refrigerate for 2 to 3 hours. Marinating the chicken allows the flavors of the herbs and lemon to deeply infuse the meat, resulting in a tender, flavorful dish once cooked. The longer the chicken marinates, the more vibrant the flavors will be.
  • Preheat your outdoor grill to high heat and lightly oil the grate. This step ensures that the grill reaches the ideal temperature for cooking, allowing the chicken to sear properly, locking in its juices and creating a flavorful, crispy exterior. Oiling the grate prevents the chicken from sticking and helps achieve those perfect grill marks.
  • Place the chicken on the grill and discard the marinade. Grill the chicken until it is fully cooked, with no pink near the bone and the juices running clear, about 15 minutes per side (smaller pieces may cook faster). To ensure it is thoroughly cooked, use an instant-read thermometer inserted near the bone, aiming for a temperature of 165°F (74°C). This guarantees that the chicken is safe to eat, juicy, and perfectly cooked.
