  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups peeled and chopped sweet potatoes
  • 3 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon dried basil
  • ½ teaspoon dried thyme
  • ¼ teaspoon paprika
  • 1 tomato, chopped
  • 1 (10 ounce) package frozen mixed vegetables
  • 1 (15 ounce) can garbanzo beans, drained
  • salt to taste
  • ground black pepper to taste

Instructions
 

  • In a saucepan, heat the oil over medium heat. Add the onion, garlic, and sweet potatoes, sautéing for about 5 minutes until the vegetables begin to soften and release their fragrant aromas.
  • Add the broth, bay leaf, basil, thyme, and paprika to the pan, then season with salt and pepper. Bring the mixture to a boil, then lower the heat to medium-low. Cover and let it simmer for about 15 minutes, allowing the vegetables to become tender without losing their texture.
  • Add the tomato, green beans, and chickpeas to the pot, stirring to combine. Let the soup simmer, uncovered, for an additional 10 minutes until the vegetables are tender. Serve the soup hot for a comforting meal.
