Ingredients
  

  • 2 pounds smoked ham hocks
  • 3 pounds collard greens - cleaned, stems removed, cut into 1/4-inch stripsĀ 
  • 1 teaspoon red pepper flakes, orĀ to taste
  • salt and freshly ground black pepper to taste

Instructions
 

  • Put the smoked ham hocks into a large pot and add 4 cups of water. Cover and simmer on low heat for about an hour, or until the meat is almost falling off the bone and the skin becomes tender. This slow simmering enhances the depth of flavor, infusing the broth with the smoky richness of the ham.
  • Take the ham hocks out of the pot and stir in the collard greens and red pepper flakes, seasoning with salt and pepper. Cover and let it simmer for about an hour, or until the greens are tender. Return the ham hocks to the pot and cook for an additional 15 minutes, allowing the flavors to meld together for a rich, flavorful dish.
