Ingredients
  

  • 2 large skinless, boneless chicken breasts, pounded to 1/2-inch thickness
  • 1 cup chipotle BBQ sauce
  • ½ onion, chopped
  • 2 tablespoons chile-garlic sauce
  • 6 large flour tortillas, warmed
  • 1 cup shredded Cheddar cheese
  • ½ cup sliced black olives
  • 1 large tomato, chopped

Instructions
 

  • Heat your outdoor grill to medium-high and brush the grate with a light coat of oil to prevent sticking.
  • Grill the chicken for 3 to 4 minutes per side, until it’s no longer pink inside and the juices run clear. Use an instant-read thermometer to check that it reaches 165°F (74°C). Once cooked, remove the chicken from the grill and let it rest until it’s cool enough to handle.
  • Shred the cooled chicken and place it in a saucepan. Stir in the BBQ sauce, onion, and chile-garlic sauce until the chicken is evenly coated. Cook over medium-low heat, stirring frequently, for about 5 minutes or until the mixture is hot and steaming.
  • Spoon the chicken mixture onto each tortilla, then top with Cheddar cheese, black olives, and chopped tomato. Roll them up tightly and serve immediately.
