- 2 large skinless, boneless chicken breasts, pounded to 1/2-inch thickness
- 1 cup chipotle BBQ sauce
- ½ onion, chopped
- 2 tablespoons chile-garlic sauce
- 6 large flour tortillas, warmed
- 1 cup shredded Cheddar cheese
- ½ cup sliced black olives
- 1 large tomato, chopped
Heat your outdoor grill to medium-high and brush the grate with a light coat of oil to prevent sticking.
Grill the chicken for 3 to 4 minutes per side, until it’s no longer pink inside and the juices run clear. Use an instant-read thermometer to check that it reaches 165°F (74°C). Once cooked, remove the chicken from the grill and let it rest until it’s cool enough to handle.
Shred the cooled chicken and place it in a saucepan. Stir in the BBQ sauce, onion, and chile-garlic sauce until the chicken is evenly coated. Cook over medium-low heat, stirring frequently, for about 5 minutes or until the mixture is hot and steaming.
Spoon the chicken mixture onto each tortilla, then top with Cheddar cheese, black olives, and chopped tomato. Roll them up tightly and serve immediately.
