Ingredients
  

  • 2 (8 ounce) fillets cod, cut in half
  • 1 tablespoon Cajun seasoning
  • ½ teaspoon lemon pepper
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons butter
  • 1 lemon, juiced
  • 2 tablespoons chopped green onion (white part only)

Instructions
 

  • Collect all the necessary ingredients to prepare the dish, ensuring everything is on hand before starting.
  • Arrange approximately 15 charcoal briquettes in a pyramid shape in the grill. Optionally, add a small amount of lighter fluid to the coals and let it sit for 1 minute before igniting with a match. Let the flames spread across all the coals for about 10 minutes, then spread them evenly in the grill. Allow the coals to burn until a light layer of white ash forms. Finally, brush a thin layer of oil onto the grill grates.
  • Coat both sides of the cod fillets with Cajun seasoning, lemon pepper, salt, and black pepper. Place the seasoned fillets on a plate and set them aside.
  • In a small saucepan, melt the butter over medium heat. Stir in the lemon juice and green onion, cooking for about 3 minutes until the onion softens.
  • Place the fillets on the preheated grill and cook for about 3 minutes per side, until golden and flaky. While grilling, regularly baste the fish with the butter mixture to keep it moist and flavorful.
