  • ½ cup olive oil
  • 2 lemons, juiced
  • 3 cloves garlic, chopped
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh oregano
  • 1 (4 pound) chicken, cut into pieces

Instructions
 

  • Combine olive oil, lemon juice, garlic, rosemary, thyme, and oregano in a glass dish. Add the chicken pieces to the mixture, ensuring they are well-coated, then cover and refrigerate for 2 to 3 hours. Marinating the chicken allows the flavors of the herbs and lemon to deeply infuse the meat, resulting in a tender, flavorful dish once cooked.
