Yakitori Chicken
Ingredients
- ½ cup sake
- ½ cup soy sauce
- 1 tablespoon sugar
- 1 clove garlic, crushed
- 1 (2 inch) piece fresh ginger root, grated
- 1 pound skinless, boneless chicken breast meat – cubed
- 3 leeks, white part only, cut into 1/2 inch pieces
Instructions
- In a medium bowl, combine the sake, soy sauce, sugar, garlic, and ginger. Add the chicken and toss to coat, letting it marinate for 15 minutes to absorb the flavors and enhance its tenderness.
- Preheat your oven's broiler. Lightly grease six metal skewers, then thread them with alternating pieces of chicken and leek—three pieces of chicken and two pieces of leek per skewer. Arrange the skewers on a baking sheet or broiling pan, and brush them with the marinade to enhance the flavor as they cook.
- Broil the skewers for about 5 minutes, then baste them again with the marinade. Continue broiling for another 5 minutes, or until the chicken is fully cooked. Discard any leftover marinade to ensure food safety.
