Ingredients

  • cooking spray
  • ½ medium onion, chopped
  • 1 clove garlic, minced
  • 1 tablespoon chili powder
  • cups chicken broth
  • 1 (4 ounce)  can canned green chile peppers, chopped
  • 1 teaspoon ground cumin
  • cups canned peeled and diced tomatoes
  • ½ cup chopped green bell pepper
  • ½ cup medium shrimp, peeled and deveined
  • ½ pound cod fillets, cut into chunks
  • ¾ cup plain nonfat yogurt

Instructions

  • Collect all the necessary ingredients and have them ready for preparation. This step ensures everything is within reach for a smooth cooking process.
  • Coat a large saucepan with cooking spray and place it over medium-high heat. Add the chopped onion and cook, stirring frequently, until it becomes translucent, which should take about 5 minutes. Stir in the garlic and chili powder, and cook for another 2 minutes until the mixture is aromatic.
  • Add the chicken broth, chopped chile peppers, and cumin to the saucepan and bring the mixture to a boil. Once boiling, lower the heat, cover the pan, and let it simmer gently for 20 minutes to blend the flavors.
  • Stir in the tomatoes, bell pepper, shrimp, and cod, then raise the heat to medium and bring the mixture back to a boil. Once it reaches a boil, reduce the heat, cover the pot, and let it simmer for an additional 5 minutes to allow the flavors to meld.
  • Slowly mix in the yogurt, stirring gently until it is fully incorporated and warmed through.
