Ingredients
  

  • 3 tablespoons olive oil
  • pounds large shrimp (21-25 per pound), peeled and deveined
  • 2 cups red peppers, diced
  • 1 cup chopped onion
  • 3 large cloves garlic, chopped
  • ½ teaspoon fennel seeds
  • 2 tablespoons chopped fresh thyme
  • ½ cup dry white wine
  • 2 tablespoons tomato paste
  • 1 (14.5 ounce)  can canned diced tomatoes
  • ½ cup chopped fresh basil
  • Salt and freshly ground pepper to taste

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Sauté the shrimp just until they turn pink but remain slightly undercooked, then remove them from the skillet and set aside. In the same skillet, add the bell peppers, onion, garlic, fennel seeds, and thyme. Cook, stirring occasionally, until the onion becomes tender and fragrant, about 8 minutes.
  • Pour in the white wine, tomato paste, and diced tomatoes, stirring to combine. Bring the mixture to a boil, then lower the heat to medium-low and let it simmer for about 10 minutes to allow the flavors to meld. Return the shrimp to the skillet and cook for another 3 minutes, or until they turn opaque. Stir in fresh basil, then season with salt and pepper to taste before serving.
