Ingredients
  

  • 3 large eggs
  • ½ cup butter, softened
  • ½ cup white sugar
  • 1 teaspoon lemon zest
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • cups plums, pitted and quartered

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly grease and dust a 9-inch tube pan with flour to prevent sticking.
  • Separate the eggs, placing the whites and yolks in different bowls. Whisk the egg whites until they form stiff peaks, then set them aside.
  • Cream the butter and sugar in a large bowl until smooth and airy. Add the egg yolks and lemon zest, beating until well combined.
  • Mix the flour and baking powder, then incorporate them into the butter mixture. Carefully fold in the beaten egg whites. Pour the batter into the prepared pan, spreading it evenly—it should only fill about an inch high. Arrange the plums, skin-side down, in a decorative pattern on top of the batter.
  • Bake in the preheated oven for about 40 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool on a rack before serving.
