  • 1 tablespoon brown sugar
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

  • In a large bowl, whisk together the pickle juice, brown sugar, kosher salt, 1 teaspoon of black pepper, and a pinch of cayenne until the sugar dissolves. Submerge the chicken breasts in the brine, using a plate or bowl to keep them fully submerged, and refrigerate for 1 to 2 hours to allow the flavors to infuse.
