Ingredients
  

  • 2 cups broccoli
  • 2 cups cauliflower
  • 2 large eggs
  • 1 cup shredded Cheddar cheese, divided
  • ½ cup mayonnaise
  • ½ cup chopped onion
  • ½ cup butter, melted
  • 1 (15 ounce) package seasoned croutons, crushed

Instructions
 

  • Set the oven to preheat at 350°F (175°C).
  • Cook the broccoli and cauliflower separately in boiling water for 3 to 4 minutes until tender. Drain the vegetables and layer them in an 11×7-inch baking dish.
  • Whisk the eggs until smooth, then mix in ½ cup of Cheddar cheese, mayonnaise, and onion. Pour this mixture over the vegetables. Drizzle melted butter over the top, then sprinkle with the remaining ½ cup of Cheddar cheese. Finally, evenly scatter the crushed croutons on top.
